From the Nov. 7 episode of the Rocky Mountain Review, Maximos Hunter and Ren Wadsworth sit down with professor Josh Olson and Marina Judkins from Colorado State University’s Aspen Grille. The Grille functions as both a classroom and an operating restaurant, serving the CSU community. Olson teaches the classes that staff the kitchen and Judkins is currently taking it. The pair describes the operation of Aspen Grille, what kinds of food they serve and what some of the goals of having a teaching restaurant are.
